Well, look no further: here\u2019s the answer!<br \/>\n<a href=\"https:\/\/www.simonwhetham.co.uk\/\" rel=\"noopener\" target=\"_blank\">Simon Whetham<\/a> was invited to explore the subject in 2022, and explored and recorded \u2018the sounds of various fermentations including red and white cabbage, green beans, ginger, courgette (a huge one donated to the project by the neighbouring florist), (non-lactose) kefir and mead.\u2019<br \/>\nThe results were presented in a <a href=\"https:\/\/www.simonwhetham.co.uk\/ovni\" rel=\"noopener\" target=\"_blank\">Swiss installation<\/a>, but now also as a release on the label experienced in the most fascinating field recordings: Gruenrekorder, who released it on cassette. Which is now sold out but personally I would recommend the digital download anyway due to the intricate details of the sound recordings.<br \/>\nListening to the detailed high-pitched pinches, sometimes near imperceivable indeed, reminded me of some of the work of Jacob Kirkegaard \u2013 especially the sounds of decomposing in his Opus Putesco part of <a href=\"https:\/\/www.ambientblog.net\/blog\/2019-11\/kirkegaard-opusmors\/\" rel=\"noopener\" target=\"_blank\">Opus Mors<\/a>. But Kirkegaard documents the sound of decay, while Whetham focuses on the process in which microorganisms create a desirable change to food or drinks.<br \/>\nIt may not be \u2018music\u2019 (in the traditional sense), but it\u2019s beautiful.<br \/>\n<a href=\"https:\/\/www.ambientblog.net\/blog\/2024-01\/simon-whetham-emmanuel-regis\/\" rel=\"noopener\" target=\"_blank\">link<\/a><\/p>\n<p>&nbsp;<\/p>\n<p><strong>Frans de Waard | <a href=\"http:\/\/www.vitalweekly.net\" target=\"_blank\" rel=\"noopener\">VITAL WEEKLY<\/a><\/strong><br \/>\nOn cassette, Whetham has documentation of work carried out at the OVNI, a creative space in Fribourg, Switzerland. Together with Milena Farioli, he did a project that explored the &#8222;sounds of various fermentations including red and white cabbage, green beans, ginger, courgette (a huge one donated to the project by the neighbouring florist), (non-lactose) kefir and mead&#8220; and these fermentations he recorded. How is not mentioned, which is a pity. Also, fermenting vegetables isn&#8217;t easily found in my kitchen, but there is undoubtedly a fascinating element to giving this stuff and recording the sound &#8211; again, if only I knew how. The sounds were played back into the space, using speakers, but &#8222;also through the glass of the various jars used and also the plate glass window, as the project fermented inside the \u201ajar\u2018 of OVNI, looked into by the passers-by each day&#8220;, which adds further to the fascination, at least on my side. Had I not known all of this, what would I have made of this cassette? It is tough to say, but a living organism (if that is what fermenting is; I am not a biologist) would not easily come to mind. Sound crackling is more like computer glitches, and there are some occasional drones; maybe, at best, I would have thought of field recordings of relatively small animals.This fifty-minute cassette is a fascinating release of what seems creepy-crawly sounds, which might give you an itchy feeling. I believe that Whetham doesn&#8217;t present this as a document, but there is actual composition to each of the six pieces, a collage of recordings he made in this period.
